To make hard cheese, most of the whey is drained from the curd. The cheese is then formed into a large round cylinder called a truckle. During the aging process, which can last between 2 and 36 months, a thick rind develops on the cheese cylinder.
It is also thanks to the aging process that more moisture evaporates and the cheese flavor intensifies as the cheese cylinder hardens.
